      <image:caption>The style of the Penderyn spirit tends to be very light and delicate. Fruity also, due to longer fermentation times, which is then accentuated with barrel aging. And despite being light, the style is very distinctive. We often hear people saying they could pick Penderyn out in a blind tasting and that the style runs through the entire range, no matter the barrel type. Of course, we need to be very careful with maturation and cask management when aging such a delicate spirit, because we would never want to lose that style. It’s what makes Penderyn Penderyn!</image:caption>

      <image:caption>We are not currently experimenting with our barley too much as there are so many other factors that we can tweak to see how it affects the whisky. However, a few years back, we did use exclusively Welsh barley for a short period. In the end, it was deemed unsustainable as there just wasn’t enough for us to keep producing. Turns out it rains too much in Wales, and it isn’t too good for the barley. Once we have a new distillery, in Swansea’s old copper quarter for example, perhaps it’s something we could experiment with at that site…</image:caption>

And then, because we don’t do things by halves, we are opening our third distillery in Swansea’s old copper quarter this year. And again, although we’ll be using a Faraday still at that site, we’ll also be looking to make some more experimental whiskies as well. Lots of exciting stuff to come!</image:caption>

The palate is remarkably complex for its young age; while there is certainly the spice and vigour one would expect from rye, there’s a wonderful fruitiness balanced against it alongside mashed banana, pine needles and some plum jam. This rich, turfy Glen Garioch harks back to the days of the distillery’s own floor malting and direct fire stills throwing out earthy aromas of Highland peat bogs, roasted barley, dark chocolate, honeycomb, leather and cigar leaf. Exceptional. If one manages to get past the nose, the palate gives a massive whack of herbaceous peat, resin, oak smoke and tar, moving to dried fruit, cocoa powder and dates. Spice rises on the finish giving lasting waves of smoke and turf. They don’t make whisky like this anymore, and after a dram one wonders why not?</image:caption>

The character is initially of dried malt, but soon develops into fresh citrus fruits, apricot yoghurt and banana bread, with a suggestion of wood smoke on the rear palate. The finish brings spiced crème brûlée, dried apple and a mouth-watering note of ripening pineapple.       <image:caption>The spirit was poured into first-fill ex-bourbon wood in February 2017, then re-racked for two and a half years into rich Pedro Ximénez wood. As with many bottlings from this brilliant distillery, the joy here is the interplay between cask and barley. Unlike most whisky-makers, our friends at Spirit of Yorkshire grow all their own barley and take an immense pride in doing so. Starting from such impeccable raw material in any endeavour gives the greatest chance of success. Here, paired with a potentially domineering ex Pedro- Ximénez Sherry cask, the rich, oily, grain sweetness is a delight. A scant few drops of water release even more sweetness alongside the opulent spice.</image:caption>
