“Mouthfeel is often overlooked as an important trait of single malt, but trying a whisky as weighty as this Dailuaine is a powerful reminder that texture is almost as important as flavour, and in most parts the two are integrated; creating a greater dram.”
Tasting Notes
This chunky Speyside wades out of the glass, offering notes of waxy honeycomb, fruit-salad chews and a pleasing floral note. The palate continues this theme, with added vibrant green fruit: Granny Smiths and pear drops, as well as dried barley, cigar papers and some beautiful waxy notes - immensely complex for a dram of this age. More fresh fruits linger on the palate, as well as a touch of spice. This is further evidence that Dailuaine is surely one of Scotland’s best lesser-known distilleries.
Dailuaine Distillery began production in 1852. In 1889, it became the first to have a pagoda roof fitted to its malting kiln. This revolutionary design vastly assisted the drying of barley and has become an iconic part of the distillery’s character.
Rob says: “Whilst not a household name due to its rich Speyside character being vital to Scotland’s blenders, Dailuaine is quite a sizeable distillery, producing noteworthy and deliciously toothsome single malt. Dailuaine is an important (if unromantic) player in Speyside’s sustainability march as an on-site ‘spent grain’ facility processing organic byproducts from a host of nearby distilleries to lessen their environmental impact.”
