“On paper I was a little nervous of Rye whiskey matured in Sauternes, but it totally works! Sweet sticky desert wine and spicey rye works together perfectly to create a near existential experience for the taste buds. It’s certainly not one to pour someone with a weak heart, but this is easily the sort of bottle I could demolish with a few good friends over a game of cards.”
Tasting Notes
American Rye Whiskey with a year’s secondary maturation in an ex-Sauternes barrel; what a combination! The nose offers up sweet, sticky notes of peaches in syrup and dried apricot balanced against a more savoury spicey note akin to fresh rye bread, very unusual and equally enticing. The palate is huge with zaps of spicey rye tempered by sweet fruity notes from the wood, flavours of marmalade, dark chocolate, pineapple and black pepper - incredible. Sweetness and spice continue to mingle on the finish leaving one in need of another sip or two to figure out exactly what just came out of that glass.
Chicago’s Few distillery was founded in 2011, ironically in what was once the home of Prohibition; Evanston, and Few is the first distillery in Evanston since Prohibition was lifted.
