This immense whisky was matured for ten years in a refill Oloroso butt, before being matured for a further two years in a fresh ex-Pedro Ximénez butt. It maybe clichéd to describe a sherry matured whisky as reminiscent of Christmas cake, but the aromas of rich fruit, baking spice, marzipan and maraschino cherriesoozing out of the glass are evocative of just that! The palate is almost too pleasurable to breakdown into tasting notes, a joyous rush of dried figs, stollen and blood orange, these notes linger on the finish with waves of gentle oak spice.
