“A moment-or-two of air helps to bring forward juicy limes alongside the sweet molasses here on the nose, but the real fun begins on the palate with waves of sweet fudge, sticky honey and candied angelica. As ever from this brilliant distillery, the finish is deliciously moreish, with plums and more honey - this is a very tricky bottle to only pour once!”


Tasting Notes

This is a delightfully elegant and lightly fruity rum. A luscious bed of honey aromas develops into dry menthol notes. The palate is dry, initially, until the honey gathers pace to give succulent bursts of sweet fruit.


 

Distillery

Diamond Distillery in Guyana sits on the banks of the famous Demerara River in an area renowned for its sugar plantations. It is the last remaining distillery in Guyana and has reclaimed stills from other former distilleries in the country. Many of these stills are now used to create heritage rums. A mix of column and pot stills is used, including traditional wooden pot stills made from local Greenheart wood. Diamond produces a range of different marks but the distillery’s character is generally considered a heavier style and renowned for its quality.

Joe Whittaker says: “History tells us that people once ventured to Guyana in search of the legendary city of Gold, El Dorado. What they returned with was not the city, but rather this liquid gold in the form of exceptional rum. The Diamond Distillery is known for being one of the last distilleries in the world to still use wooden stills as part of their production. Producing beautiful rich, textured and delicious rum from the famed Demerara sugar cane. It's definitely one of my favourites in the world of rum. ”
