Rob Whitehead

“Oak-driven on the nose, this beautiful single malt from Israel shows touches of peat that grow much more intense on the palate and then slowly fade into the finish, accompanied by handsome wood and tobacco. Dried and stewed fruits feel interwoven throughout, particularly citrus peels and plum.”

Tasting Notes

This STR cask (“shaving, toasting and re-charring’’) was filled with equal quantities of the distillery’s peated and unpeated spirit, before being matured for three years in Israel. The nose offers thick slabs of fruit jelly: apricot, quince and overripe mango, opening up to notes of tobacco and crystallised ginger. The palate is incredible, viscous and chewy, showing notes of black cherry, espresso and dark chocolate, all with a deliciously fruity undertone. The finish delivers an explosion of spices, cinnamon, nutmeg and root ginger. This is a muscular dram worthy of many repeat visits.

Distillery

In 2014 Milk & Honey began distilling Israel’s first ever single malt whisky. Based in Tel Aviv, the distillery produces both peated and unpeated styles while taking full advantage of Israel’s climate for maturation. All of the distillery’s products are Kosher

Jonny says: “Milk & Honey is almost a genre of it’s own, pairing complex, flavoursome malt distillate with the full oak-driven character that comes with hot climate maturation.”
