“Some years ago, we bottled a Jamaican Rum after aging in an ex- Islay whisky cask. It is fascinating here to see the chewier fruitier Guyana spirit taking hints of fireplace and graphite whilst still proudly declaring its luscious Demerara origins. Drink with pecan pie, or treacle tart... something goo-ey!”

Tasting Notes

This Guyana rum was re-racked into an ex-Williamson Islay whisky barrel for 12 months. The nose is an unusual pairing of the high ester tropical fruits that Guyanan rum often displays, with a slight ashy note drifting in, as if carried on a sea breeze. The palate is complex giving tobacco leaf, some engine oil and plenty of overripe fruit, leading to more of the same delicate smoke on the finish. A very unusual rum; if you have the opportunity and stamina, it is best paired with the Williamson.
